500 g fresh shrimps
1 avocado rippen, green, peeled and cored
5-6 tbsp olive oil
7-8 black olives (Kalamata), cored and cut
fleur de sel
2 tbsp fresh lemon juice
Wash and dry the shrimps. Remove the heads. Roast them on the grill (preferably a flat one) a couple of minutes, until they become pink.
Just before you prepare the salad, cut the avocado in thin slices.
Mix together the olive oil, lemon juice and olives, then stir in the shrimps.
Arrange the salad on individual platters: first slices of avocado, then shrimps, then any sauce left. Season with salt and pepper.
