Vegan Zucchini Brownies

  • 2 tablespoons ground flaxseeds
  • 5 tablespoons filtred water
  • 270g all-purpose flour (sifted)
  • 200g brown sugar
  • 65g cocoa (sifted)
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine Himalaya Salt
  • 125ml cold pressed sunflower oil
  • 1 teaspoon orange extract
  • 350g grated zucchini (do not drain or squeeze)
  • 80g chocolate chips (dark/vegan ) (plus extra for topping)
  • 50g seed mix (flaxseeds, sunflower, pumpkin)

Mod de preparare

1. Preheat the oven to 180 degrees Celsius.
2. Grease a baking dish and line it with parchment paper.
3. In a small bowl, stir the flaxseed and water and set aside for 5 minutes to get a thicker consistency.
4. In another bowl mix the dry ingredients: flour, sugar, cocoa, baking powder, salt.
5. In a large bowl, mix together the sunflower oil, orange extract, and flaxseed mixture, then stir in the zucchini.
6. Add the dry ingredients to the zucchini mixture and stir well. Let rest for 1 minute and stir again, making sure to incorporate everything. Add the chocolate chips.
7. Pour the batter into the prepared pan and use a spatula to smooth the top. Sprinkle with more chocolate chips and seeds mix.
8. Bake for 45-50 minutes. Remove from the oven and let cool for at least 1 hour.
